French Onion Soup | شوربة البصل الفرنسية

Baked French Onion soup, with french baguette & mozzarella cheese

It's as cold as it can get here in Kuwait (by cold i mean its 15 degree Celsius). Me and the kids have be struck by flu for the past two weeks. This flu just won't go away. My poor babies have been coughing all night, hearing them is just heart drenching.

Nothing fights flu better than homemade soup. My recipe for French onion soup requires simmering on the stove for a while, but the result is mouth watering, flu curing potion. No, I don't promise that this soup will cure your flu, but i can assure it will make you so much better afterwards, and most importantly warm.

Traditionally this soup is made with red onions, but since I only had white onion, I went with that one. I used white only. But feel free to use any & all types of onion you want.

As you can see from the picture below I used a frying pan first to caramelize the onions. Don't follow my lead, and use a deep heave bottom saucepan from the start. I did remove my onion to a deeper saucepan before they began to caramelize so i don't loose the good caramel stuff that will stick to the bottom of the pan.

That's a lot of onion.. Needless to say, I literally wept while i was chopping them. I transferred the onions to a deeper pan because that one was too shallow.
